Cinnamon Rolls with Cream Cheese Frosting

Makes 6 cinnamon rolls
INGREDIENTS
Dough
- 1 large ripe banana, mashed
- 7 Tbsp oat flour
- 7 Tbsp almond flour
- 7 Tbsp tapioca flour or arrowroot flour
- 1 tsp baking powder
- Pinch of sea salt
Cinnamon Sugar Filling
- 3 Tbsp Monty's Butter, softened
- 1/4 cup coconut sugar
- 2 tsp cinnamon
Cream Cheese Frosting
- 6 oz Monty’s Original Cream Cheese
- 3-4 Tbsp maple syrup or honey, to taste
DIRECTIONS
- Add all of the dough ingredients together in a mixing bowl, mix using a spoon, and then use your hands to create a nice smooth dough. Set aside.
- In another bowl, mix together Monty’s Butter, coconut sugar, and cinnamon, until a smooth paste forms.
- Place the ball of dough between two pieces of parchment paper and roll out into a rectangle shape. Spread on the cinnamon sugar mixture until evenly distributed, then pick up the dough on one end and carefully roll into a round log shape. Slice into equal pieces and add to a greased baking dish.
- Bake at 350°F for 15 minutes. Flip them over to serve, because the bottoms get nice and caramelized/saucy.
- To create the cream cheese frosting, simply mix one container of Monty’s Original Cream Cheese with 3 to 4 Tbsp of maple syrup (or another liquid sweetener, to taste.) Mix together until it becomes a nice whipped frosting consistency.
- Spread the frosting on the cinnamon rolls and enjoy!
